Back in 1995, the Bayter family decided to jump into farming at El Vergel with a focus on avocados. But when avocado prices took a dive in 2006, they switched gears and started growing coffee. They tried out different coffee varieties like catimore, red, and yellow caturra, and just like that, a coffee empire was born!

 

Fast forward to 2016, they teamed up with coffee expert Miguel Jimenez and planted some specialty coffee varieties. By 2018, they were experimenting with natural coffee processes and perfecting their fermentation techniques. Their standout innovation? The Koji fermentation process – a true game-changer in green coffee!

 

Behind this coffee revolution is a dynamic trio: Martha Montenegro and her partners, Elias and Shady Bayter. They’re not just about making great coffee; they’re dedicated to transforming their community. Their goal is to blend technology with their passion for coffee and spread a little extra joy to everyone involved with El Vergel Estate.
