Colombia’s one of those rare places on earth where coffee can be harvested twice a year, thanks to its spot right on the equator. That means there’s always something fresh on the way. And because the Andes run right through the country, stretching from top to bottom, each region has its own vibe — and each coffee its own flavour. It’s pretty wild how much variety comes from just one country.
This particular coffee comes from Martha Cecilia Rodriguez, a third-generation grower with just 2 hectares of land in Palestina, Huila, about 1,800 metres up in the mountains. Martha’s story is a mix of tradition and bold change — she switched from growing the usual varieties to Geisha, one of the most sought-after in the world, to try and build a better life for her family.
She’s gone deep into experimental processing too. Since 2021, she’s been refining her approach, working with natural and anaerobic fermentation techniques to push flavour as far as it can go.
Process: 90H Anaerobic Natural
For this lot, she handpicks ripe Geisha cherries, seals them in barrels for 90 hours of anaerobic fermentation, then slowly sun-dries them over 30 days on a covered patio. It's careful, slow, intentional — and the result is a super expressive coffee that’s full of complexity and character.
