Denbi Uddo – A Coffee Gem from Guji

Denbi Uddo is located in Guji, a renowned coffee-growing region in Ethiopia known for its rich volcanic soil, high elevations, and distinct cup profiles. Guji coffee is celebrated for its fruity, floral, and complex flavor notes, often displaying stone fruit, berries, tropical sweetness, and tea-like elegance.

 

Unlike its neighboring regions, Sidamo and Yirgacheffe, which have long been famous for their washed coffees, Guji has gained global recognition for its exceptional natural-processed coffees, which highlight bold fruit notes and deep sweetness. The region's dense forests, mineral-rich soil, and high altitudes (1,800–2,300 masl) create the perfect environment for producing some of Ethiopia’s most sought-after coffees.

 

Testi's Natural Denbi Uddo coffee comes from family-owned farms around the Denbi Uddo coffee mill, located near the town of Shakiso in the Guji Zone of the Oromia Region. The farms are part of an enhanced process project aimed at improving cup quality through meticulous sorting and fermentation techniques.

 

Processing Style – Natural

This coffee underwent a controlled fermentation and drying process to enhance its complexity and sweetness:

  • Cherry Selection:
    • 85% well-ripe cherries
    • 10% reddish unripe cherries
    • 5% overripe cherries
  • The cherries were immersed in water tanks to remove floaters (lower-quality cherries).
  • After floaters were removed, the selected cherries were placed on raised African beds.
  • Dried under a parabolic shade net for 21 days, ensuring a slow, even drying process that enhances the coffee’s clarity, sweetness, and fruit-forward character.

 

This enhanced natural process helps preserve the vibrant flavors of Guji coffee, creating a bold, juicy, and complex cup that showcases the best of the region.

 

Guji – Ethiopia’s Coffee Treasure

Guji is part of the Oromia Region, Ethiopia’s largest coffee-producing area. Historically, Guji was often grouped with Sidamo, but in recent years, it has gained recognition as a distinct region due to its unique coffee profiles. Guji’s coffees tend to be fruitier and more intense than Yirgacheffe’s, while still maintaining floral elegance and bright acidity.

 

Many Guji farms are semi-forested, meaning coffee grows under natural shade, among indigenous trees and rich biodiversity. This traditional farming method contributes to the region’s eco-friendly coffee production and high-quality harvests.
